Fudgey Pecan Pie
Ingredients:
1/3 cup butter
2/3 cup sugar
1/3 cup cocoa
3 eggs
I cup light corn syrup
1/4 tsp. salt
2+ cups pecans
1 pie crust (I use the basic Martha Stewart recipe)

Directions:
Heat oven to 375. In a medium saucepan over low heat, melt the butter. Add sugar and cocoa, stirring until well blended. Remove from heat and set aside. In a medium bowl, beat eggs slightly- stir in corn syrup and salt. Add cocoa mixture; blend well. Stir in pecans (add more if you’d like). Pour into unbaked pie shell. Bake at 375 for 50-60 minutes, or until knife inserted in center comes out clean.
Homemade Granola (in mason jars as christmas presents)
Ingredients:
4 cups rolled oats
1 cup slivered almonds
1/2 cup pecans
1/4 cup brown sugar
1 teaspoon cninamon
1/4 teaspoon salt
1/3 cup vegetable oil
1/6 cup honey
1/3 cup water

Directions:
Preheat oven to 300 degrees. In a large mixing bowl, stir together the oats, nuts, brown sugar, cinnamon and salt. 
Make a well in the dry ingredients and add the oil, honey, and water. Toss until well combined and spread evenly on a baking sheet. 
Bake for 30 minutes or until lightly browned, stirring every 5-10 minutes. Makes about 7 cups.
